When I was Raw I would slice sweet potato into thin "chips" and eat guacamole with that.
Like any substitute food, no, the raw vegetable doesn't replace the salty, oily chips.
But it does have crunch, as is good unto itself. If corn chips ain't healthy enough for ya, it's a good alternative.

Yum! I'm going to try this next time I find a ripe mango.

I also love using quinoa instead of bulgar in a tabbouleh salad.

Mmmm, quinoa... I love to use it to make stuffed zucchini. It's crunchy texture makes it more interesting than rice or couscous as both tend to get a bit too soft and then there's no contrast with the veggie. That being said, I also use quinoa instead of couscous in tabouleh. In fact, I like quinoa all the time...

Personally, there is nothing I find more appealing than a properly done vegetable. There is such beauty in that simplicity. Not to mention that the use of vegetables is so much wider in terms of textures and flavours than any other food group. Veggies can be the ultimate chameleons. As a reference, you may want to pick up Patricia Wells book "The Vegetable Harvest". It's classic French food but all recipes that start from a vegetable, instead of protein, in the plate and build around it.
